Bei jedem Schneckenpaar drehen sich die beiden Schnecken in entgegengesetzten Richtungen, so daß die Butter in den Raum zwischen den Schnecken gefördert wird, wobei sie gleichzeitig, gesehen in der Zeichnung nach rechte, gefördert wird. Die Kammern 3 und h werden durch Kühlmäntel 7 gekühlt, durch welche, z.B. Eiswasser geleitet wird. Die in der Kammer 3 durch die Schnecken 5 abgetrennte Buttermilch wird in einem Trichter 8 gesammelt, der am unteren Ende der Kammer vorgesehen ist, und fließt von diesem Trichter durch einen Überlauf, der durch ein gebogenes Rohr 9 gebildet wird.
