Abstract
930,981. Grinding cocoa. G. MOSIMANN. June 8, 1961 [June 9, 1960], No. 20823/61. Class 59. [Also in Group VI] In a method, which may be continuous, for the production of chocolate products, the particle size of the cocoa component is reduced in the absence of oxygen. Ingredients are fed from containers 1 and 2 into a mixer 3 from which the mixture is pneumatically conveyed through a drier 5 including a cyclone unit 5b before entering a cooler 6. The cooled mix is ground in a device 7, from which the air is extracted by a pump P, and which is fed with nitrogen from a supply S. The initial temperature of the mix during grinding is maintained, by cooling the device 7. The ground product is then fed, by means of a cyclone 8, and via a dosing device 9, to a kneading device 10 together with cocoa butter fed from a container 14 via a dosing device 12. The kneaded product is forced into an homogenizer 13, and then passes to a container 14 from which it is fed to an ultrasonic device 15 and the final product is passed to a container 16. The ultrasonic treatment may take place before grinding.
