Abstract
In producing sugar from fresh or dried plant material, such as sliced sugar-beet, comminuted sugar-cane, dates, figs and maple, sugar is extracted by treating the material with an aqueous solution containing at least 20 g/m.3, preferably not more than 80 g/m.3, for example between 30 and 50 g/m.3, of at least one condensed phosphate. Suitable condensed phosphates are: sodium tripolyphosphate, Na5P3O10; neutral sodium pyrophosphate, Na4P2O7; acidic sodium pyrophosphate Na2H2P2O7; sodium tetra-or octa-polyphosphate, sodium hexametaphosphate (Graham's salt) and cyclic-metaphosphates such as sodium tri- or tetra-metaphosphate. Mixtures of one or more condensed phosphates with a sparingly soluble, highly condensed phosphate, e.g. Kurrol salt, and a solubilizing salt, and mixtures of condensed phosphates with solubilizing salts, such as sodium sulphate, bicarbonate or pyrophosphate may be used. The treatment may be effected in a continuously operating diffusion tower.
