Abstract
A flavouring contains the monosodium salt of an a -amino dicarboxylic acid, e.g. monosodium L-glutamate, L-aspartate, threo-b -hydroxy-L-glutamate or L-a -amino adipate, or the monosodium salt of homocysteinic acid, SO3Na.CH2.CH2CH(NH2)COOH, with the sodium salt of inosinic acid, <FORM:0916284/VI/1> to "strengthen" the taste. The examples are of mixtures of 100 parts of crushed crystals of the a -amino dicarboxylic acid salt with 2, 3, 5 and 10 parts of crushed crystals of the sodium inosinate and of 100 parts of the homocysteinic acid salt with 1 and 2 parts of crushed crystals of the sodium inosinate.
