Verfahren zur Herstellung einer Speisewürze und nach dem Verfahren hergestellte Speisewürze Die Erfindung betrifft ein Verfahren zur Her stellung einer Speisewürze, welches dadurch gekenn zeichnet ist, dass man l-20 Gewichtsteile Natriumino- sinatkristalle mit 100 Gewichtsteilen Kristallen von u-Amino-dicarbonsäure-mononatriumsalzen vermischt, wobei die Kristalle vor oder nach dem Mischen fein zerteilt werden.

Gestützt auf diese Feststellungen entwickelte sich die industrielle Herstellung des Produktes von Jahr zu Jahr seit 1908, und das genannte Mononatrium glutamat ist jetzt als bevorzugtes Würzmittel welt bekannt.
Indessen ist das Natriumsalz der Inosinsäure der chemischen Formel:

nicht so befriedigend durchforscht, obgleich es als Würzbestandteil im Fischfleisch und im Fleisch be- kannt war. Jedoch haben bisher keine wissenschaft lichen Untersuchungen Licht in die geschmacklichen Beziehungen zwischen Mononatriumglutamat und Natriuminosinat gebracht.
Es wurde nun gefunden, dass ein Zusatz einer ausserordentlich geringen Menge von Natriuminosinat, selbst eine unter dem Schwellpunkt liegende Menge, den Geschmack von Mononatrium-L-glutamat in bemerkenswerter Weise verstärkt.
Der Geschmack von Mononatrium-L-glutamat und der von Natrium- inosinat sind deutlich verschieden voneinander, wie nachstehend beschrieben wird, obgleich sie bei acht losem Abschmecken vielfach als ähnlich empfunden werden, und die vorstehend erwähnte Tatsache ist ganz verschieden von der arithmetischen Geschmacks summe beider Verbindungen bei Mischungen mit einander in irgendwelchen Verhältnissen.
Bezüglich des Schwellenwertes von Mononatrium glutamat ist über viele Feststellungen berichtet wor den, wobei die Ergebnisse zwischen 0,04 bis 0,0311/0 liegen. Nach Feststellung des Geschmacks durch ein aus etwa 50 Mitgliedern bestehendes Prüfer gremium, welche zum Forschungsinstitut der An- melderin gehören, und deren Fähigkeit für eine exakte Geschmacksbeurteilung geprüft wurde, wurde indessen ein Wert von 0,02511/o ermittelt.
Es ist kein anderer Weg bekannt, zahlenmässig die Art und den Grad eines Geschmacks durch chemische oder physikalische Weise, z. B. mit elek trischen Vorrichtungen, festzustellen. Die gewählte Testung ist, wie sich gezeigt hat, die beste und einzige Methode zum Messen eines Geschmacks und wird in den verschiedenen Ländern in grossem Um- fang benutzt. Darüber hinaus wird die Genauigkeit der Prüffähigkeit solcher Prüfer notwendigerweise durch die neuerdings entwickelten Mittel jederzeit vor Durchführung von Experimenten geprüft.
Darum sind die durch solche Teste erhaltenen Ergebnisse zuverlässig für die wissenschaftliche Beurteilung.
Der Schwellenwert von Natriuminosinat, über den niemals etwas berichtet worden ist, wurde von den Geschmacksprüfern mit 0,025 0/a ermittelt. Mit anderen Worten, der Geschmack von Natriuminosinat kann offenbar nur empfunden werden, wenn die Konzentration in wässriger Lösung über 0,025 0/0 liegt unter Ausschluss von anderen Geschmacksstoffen.
Man hat nun die besondere Wirkung von Na triuminosinat in Gegenwart von Mononatrium glutamat bei Konzentrationen festgestellt, die merk lich niedriger waren als der festgestellte Schwellenwert des Inosinats von 0,025 %, beispielsweise nur 0,0003 %, das für sich allein geschmacklich nicht festgestellt werden kann,
aber den Geschmack des Glutamats beträchtlich erhöht. Die Tatsache wurde mit Sicherheit durch viele wiederholte Prüfungen, wie nachstehend wiedergegeben, sichergestellt.
Die Geschmacksprüfer erhielten fünf verschiedene wässrige Lösungen von Mononatriumglutamat im gan zen einschliesslich vier Proben, wobei der Konzen trationsunterschied offenbar durch die Prüfer klar gestellt werden konnte, sowie eine Probe, der eine ganz geringe Menge Natriuminosinat zugesetzt war, um sie in Reihenfolge ihrer Stärke zu prüfen und nach dem Geschmack (organoleptische Prüfung) zu klassifizieren.
Bei diesen Untersuchungen wurde ein auf gleiche Stärke lautendes Urteil nicht zuerkannt und die Klassifizierung von 1-5, von dem stärksten bis zum schwächsten Gehalt, wurde gefordert. Zu jeder Probe wurde 10/ Tafelsalz gegeben, das allge mein als Zusatz benutzt wird und üblicherweise die Geschmacksprüfung wässriger Lösungen erleichtert.

5 fachen Wert durch Zusatz von Natriuminosinat erhöht wird in einer Menge von 1/100 der Glutamat menge. Unter Berechnung des Verhältnisses des ver wendeten Natriuminosinats versteht es sich, dass die Geschmackserhöhung unter derartigen Bedingungen (das Zusatzverhältnis und die Konzentration), wie in dem vorstehenden Beispiel angegeben, das 150fache ergibt

Obgleich die vorstehend erwähnten Ergebnisse mit einem Zusatz von 1,01/o Tafelsalz erzielt wur den, stellte man keine abweichenden Ergebnisse fest, wenn kein Tafelsalz zugefügt wurde. Mit anderen Worten, die Einstufung war in beiden Fällen dieselbe. Die Versuche wurden ebenfalls mit dem Prüfer kollegium, das aus etwa 50 Prüfern bestand, wie in Beispiel 1-3 durchgeführt.
Obgleich die zu verwendende Menge Mono natriumglutamat je nach der Art der Nahrungs mittel variiert, beträgt die Konzentration, die end gültig für die Tischzubereitung dient, etwa 0,1 bis 0,3 %, besonders bei Suppen und dergleichen. Aus diesem Grund wurde diese Konzentration auch bei den vorstehend gemachten Untersuchungen verwen det.
Theoretisch gesehen, erklären sich die vorstehen den Tatsachen wie folgt: Mononatriumglutamat in einer wässrigen Lösung mit einer Konzentration von etwa 0,1% erregt nur die Geschmacksnervenknospen, die konzentrisch in der Zungenwurzel angeordnet sind, und der Geschmack wird nur durch solche Geschmacksnervenknospen empfunden. In einer Lö sung mit 0,3 0/a oder mehr werden alle Geschmacks knospen auf der ganzen Oberfläche der Zunge gleich zeitig angeregt.
Der Grund, weshalb der Geschmack von Mononatriumglutamatlösung von ungefähr 0,10/0 durch den Zusatz von so ausserordentlich geringen Mengen wie 0,001 bis 0,004'0/a Natriuminosinat, welche in der Lösung kaum bemerkt werden können, mehrmals angeregt wird, liegt darin, dass alle Ge schmacksknospen, die an der Zungenspitze und im Mittelteil der Zunge verteilt angeordnet sind, gleich zeitig bei einer 0,3 0/0 oder höheren Konzentration. angeregt werden.
Demgemäss kann die geschmack- steigernde Wirkung von Natriuminosinat in einer Kon zentration unter dem Schwellenwert als eine Art Akti vierung angesehen werden.
Im allgemeinen besitzt die L-Form des Alkali salzes von a-Aminodicarbonsäuren mit 4-7 C-Atomen einen mehr oder weniger delikaten Geschmack, und die von L-Glutamat ist die am meisten wohl schmeckende. Alkalisalz von Homocysteinsäure, die eine ähnliche Struktur besitzt wie a-aminodicarbon- saure Salze, hat ebenfalls einen solchen Geschmack.
L-Asparaginsäure der chemischen Formel

welche einen der L-Glutaminsäure sehr verwandten Aufbau hat, ist frei oder als Bestandteil von Verbin dungen weit verbreitet. Sie hat nur 4 C-Atome und demgemäss ist ihr Wohlgeschmack schwach und von einem sauren Ge schmack begleitet. Da L-asparaginsaures Natrium eine analoge chemische Struktur wie Natrium-L-Glutamat besitzt, sind seine chemischen Eigenschaften denen der letzteren analog.
Jedoch haben entweder die Kristalle oder eine gesättigte wässrige Lösung von L-asparaginsaurem Natrium einen etwas salzigen Ge schmack, der begleitet ist von einem wohlschmecken den schwachen Nachgeschmack. Daher hat man nie mals an L-Asparaginsäure oder deren Salz zur Ver wendung als Würzmittel oder dergleichen gedacht.
Es wurde nun gefunden, dass ein Zusatz von ausserordentlich geringen, selbst unterhalb der Ge schmacksschwelle liegenden Mengen von Natrium inosinat zum Mononatrium - L - asparaginat den Geschmack des letzteren in bemerkenswerter Weise erhöht, wie auch im vorgenannten Fall von Mono- natrium-L-glutamat.
In der Literatur finden sich keinerlei Hinweise auf den Geschmacks - Schwellenwert von Mono natrium-L-asparaginat. Gemäss den Ergebnissen der Geschmacksprüfung wurde der Schwellenwert bei 0,1% festgestellt. Es ist daher verständlich, dass ent- weder der Geschmack des genannten Asparaginats oder der des genannten Inosinats offenbar nur emp funden wird,
wenn die Konzentration in der wäss- rigen Lösung über 0,1 bzw. 0,025 % bei Ausschluss der Einwirkung anderer Verbindungen liegt.
Es wurden 0,1 %ige (Schwellenwert) wässrige Lö- sungen von Mononatrium-L-asparaginat mit einem Zusatz von etwa 0,0025 % Natriuminosinat sowie eine andere Lösung derselben Konzentration des erst genannten ohne Zusatz des letzteren geprüft,
wobei sämtliche Prüfer den angenehmen Geschmack des ersteren gegenüber dem Geschmack des letzteren feststellten. Auch bei dem organoleptischen Prüf verfahren für 0,010/0 (unter dem Schwellenwert) wässrige Lösungen von Natriuminosinat mit einem Zusatz von etwa 0,01 % Mononatrium-L-asparaginat und einer anderen Lösung der gleichen Konzentration ohne Zusatz unterschieden die Geschmacksprüfer gut den Geschmack derselben.

Um<B>die</B> Verwendungsmöglichkeiten als Würz- mittel sicherzustellen, war zu ermitteln, ob zahlreiche Personen den Geschmack solcher Mischungen als ähnlich mit. dem Geschmack von Mononatriumglutamat anerkennen würden oder nicht.
Versuche, bei denen die Geschmacksnatur durch die Geschmacksprüfung eines Kollegiums beschrieben ist, dienen zu diesem Zweck. 49 Prüfer bekamen zur Prüfung eine wässrige Lösung mit 0,2 % Mononatrium-Irasparaginat und 0,01% Natriuminosinat sowie eine zweite wässrige Lösung nur mit 0,
2 %Mononatrium-L-asparaginat. 46 Prüfer beschrieben einen stark angenehmen Ge schmack oder einen solchen Geschmack als gleich wertig mit Mononatriumglutamat für die erste Probe, während nur 14 Prüfer einen schwach angenehmen Geschmack für letztere feststellten. Aus diesen Ergeb nissen ist es zweifellos klar, dass viele Leute mit Sinn für Wohlgeschmack bei dem Geschmack von Mono natrium L-asparaginat mit einem geringen Zusatz von Natriuminosinat das gleiche empfinden wie bei Mono- natriumgl_utamat.
Eine passende Zusatzmenge von Natriuminosinat zum Mononatrium-L-asparaginat liegt, wie gefunden wurde, in den Grenzen von 2/10o bis 20/l00. Eine be friedigende Wirkung ergab sich bei der Herstellung von Produkten aus beiden Verbindungen und Zusatz derselben zur Speise (Suppe und dergleichen) in einem zwischen 0,1 und 0,3 0/0 liegenden Verhältnis.
Es wurde weiter gefunden, dass der Zusatz einer ausserordentlich geringen Menge von Natriuminosinat, die sogar unter dem Schwellenwert lag, zum Mono natriumsalz der L-Homocysteinsäure der chemischen Formel

den Geschmack des letzteren in bemerkenswerter Weise erhöht, wie auch im vorher erwähnten Fall von Mononatrium-L-asparaginat.
Im Hinblick auf die organoleptische Prüfung von Mononatrium-L-homocysteinat wurden 10 ausgezeich nete Prüfer unter einigen 70 ausgewählt, die Mitglie der unseres Untersuchungsinstituts waren und deren Fähigkeit und die Genauigkeit in Geschmacksange- legenheiten während der Dauer der Untersuchungen häufig nachgeprüft wurde. Weiter wurde die Analyse der Versuchsergebnisse beständig durchgeführt. Die Ergebnisse der Prüfung waren demgemäss in wissen schaftlicher Hinsicht zuverlässig.
Der Schwellenwert von Mononatrium-L-homo- cysteinat, der bisher nie bestimmt worden ist, ergab sich mit 0,015 0/0.
Die Geschmacksprüfer unterschieden sicher Lö- sungen mit einem Gehalt von 0,1% Mononatrium-L- homocysteinat und 0,00025 % oder mehr Natrium- inosinat von einer anderen wässrigen Lösung mit nur der gleichen Menge des Homocysteinats allein.
Sie unterschieden auch mit Sicherheit Lösungen mit 0,01% Natriuminosinat und 0,0010/a oder mehr Mononatrium-L-homocysteinat von einer anderen wässrigen Lösung, die nur dieselbe Menge Inosinat ohne Zusatz enthielt.

001% Natriuminosinat gleichwertig ist mit der einer Lösung mit 0,1-0,2 % Mononatrium-L-glutamat. Bei einer Verdoppelung des Natriuminosinats in einer Lösung mit 0,
05 % Mononatrium L-homocysteinat und 0,002 % Na- triuminosinat wurde diese gleichwertig befunden mit einer Lösung von etwa 4 % Mononatrium-L-glutamat.
Die geeignete Zusatzmenge von Natriuminosinat zum Mononatrium-L-homocysteinat ergab sich zwi schen 1/10o bis 15/l00. Befriedigende Wirkungen wur den anerkannt bei aus beiden Komponenten herge stellten Produkten bei einem Verhältnis als Zusatz zu Speisen in einer zwischen 0,1-0,3% liegenden Konzentration.
Es wurde ferner gefunden, dass bei einem Zusatz einer ausserordentlich geringen, selbst unter dem Schwellenwert liegenden Menge von Natriuminosinat zum Mononatriumsalz der Threo-ss-hydroxy-L-glut- aminsäure der chemischen Formel

Die organoleptische Prüfung des erwähnten ss- Hydroxyglutamats wurde in gleicher Weise wie vor stehend beschrieben durchgeführt und die Ergebnisse der Untersuchung wurden ebenfalls als wissenschaft- lich bindend bewertet.
Der Schwellenwert von Mononatrium-threo-ss- hydroxy-L-glutamat, der bisher nie bestimmt wurde, ergab sich zu 0,03 %.
Die Geschmacksprüfer unterschieden klar wässrige Lösungen mit 0,1% Mononatrium-threo-ss-hydroxy- L-glutamat und 0,00010/0 (1/30o des Schwellenwertes) oder mehr Natriuminosinat von einer anderen wäss- rigen Lösung mit der erwähnten Menge des ss-Hydroxy- glutamats allein.
Auch bei der organoleptischen Prü- fung einer 0,01% wässrigen Lösung von Natrium- inosinat (1/i,5 des Schwellenwertes) mit einem Zusatz von 0,
001% oder mehr des erwähnten ss-Hydroxy- glutamats (1/3o des Schwellenwertes) und einer ande ren Lösung der gleichen Konzentration des ersteren ohne Zusatz des letzteren unterschieden die Ge schmacksprüfer den Geschmack gut.

Es wurde auch klargestellt, dass, da die Wirkung von ss-Hydroxy-glutamat gleich wertig ist mit der von Mononatriumglutamat, die erstere bemerkenswert verstärkt wird durch einen so geringen unter dem Schwellenwert liegenden Zusatz von Natriuminosinat.
Eine geeignete Menge Natriuminosinat, zugesetzt zu Mononatrium-threo-ss-hydroxy-L-glutamat, ergab sich in einer Höhe von 1/10o bis 1 /l00. Befriedigende Wirkungen wurden anerkannt, wenn Produkte aus beiden Verbindungen hergestellt wurden, und zwar in einem solchen Verhältnis zu Speisen in einer zwi schen 0,1-0,3 0/0 liegenden Konzentration.
Es wurde weiter festgestellt, dass der Zusatz einer ausserordentlich geringen, selbst unter dem Schwellen wert liegenden Menge von Natriuminosinat zum Mononatriumsalz der L-a-aminoadipinsäure der che mischen Formel

den Geschmack der letzteren wesentlich erhöht.
Im Hinblick auf die organoleptische Prüfung des a-Amino-adipats wurden 10 ausgezeichnete Prüfer aus 70 Prüfern ausgewählt und die Analyse in der vorher für Homocysteinat erwähnten Art durchgeführt. Dem gemäss sind die erhaltenen Ergebnisse ebenfalls zu verlässig.
Der Schwellenwert von Mononatrium-L-a-amino- adipat, der ebenfalls niemals bestimmt worden ist, ergab sich zu 0,25 0/a.
Die Geschmacksprüfer unterschieden deutlich wässrige Lösungen mit 0,1 % a-Amino-adipat (1/2,5 des Schwellenwertes) und 0,0025 % Natriuminosinat (1/l(, des Schwellenwertes) von einer anderen wäss- rigen Lösung mit der gleichen Menge a-Amino-adipat allein.
Sie unterschieden deutlich auch wässrige Lö- sungen mit 0,01% Natriuminosinat (1/2.5 des Schwellenwertes) und 0,02 0/0 (1/l0 des Schwellen wertes) oder mehr a-Amino-adipat von einer anderen wässrigen Lösung mit nur Inosinat. Im Vergleich mit allen vorstehend erwähnten Un tersuchungen wurden Geschmacksprüfungen von wäss- rigen Lösungen von 16 Arten natürlicher, anderer als saurer Aminosäuren, Natriumchlorid, Sukrose, Essig säure, Bernsteinsäure und dergleichen mit einem Zu satz von Inosinsäure in einer unter dem Schwellen wert liegenden Menge geprüft, aber keine Änderung des Geschmacks bei allen diesen Versuchen festge stellt.
<I>Beispiel 1</I> 3 Gewichtsteile Natriuminosinatkristalle wurden innig mit 100 Teilen Mononatrium-Lrglutamatkristal len gemischt. Die Kristalle wurden zerkleinert, so dass die 1. Komponente in der letzten Komponente fein verteilt war.
<I>Beispiel 2</I> 100 Gewichtsteile Mononatrium-L-glutamatkri- stalle wurden zerkleinert und durch ein 75-Maschen- sieb gegeben. 3 Teile Natriuminosinatkristalle wurden ebenfalls zerkleinert und beide Komponenten innig miteinander zu einer feinen Dispersion gemischt.

Although the amount of monosodium glutamate to be used varies depending on the type of food, the concentration that will ultimately be used for table preparation is about 0.1 to 0.3%, especially for soups and the like. Theoretically speaking, the above facts can be explained as follows: Monosodium glutamate in an aqueous solution with a concentration of about 0.1% excites only the taste buds which are concentrically arranged in the root of the tongue, and the taste is only felt by such taste buds. In a solution with 0.3 0 / a or more, all taste buds on the entire surface of the tongue are stimulated at the same time.
The reason why the taste of monosodium glutamate solution of about 0.10 / 0 is stimulated several times by the addition of extremely small amounts such as 0.001 to 0.004'0 / a sodium inosinate, which can hardly be noticed in the solution, is that all the taste buds that are distributed at the tip of the tongue and in the middle part of the tongue, at the same time at a concentration of 0.3% or higher. be stimulated.
Accordingly, the taste-enhancing effect of sodium inosinate in a concentration below the threshold value can be viewed as a kind of activation.
In general, the L-form of the alkali salt of α-aminodicarboxylic acids with 4-7 C atoms has a more or less delicate taste, and that of L-glutamate is the most tasty. The alkali salt of homocysteic acid, which has a similar structure to α-aminodicarboxylic acid salts, also has such a taste.

Since sodium L-aspartic acid has an analogous chemical structure to sodium L-glutamate, its chemical properties are analogous to those of the latter.
However, either the crystals or a saturated aqueous solution of sodium L-aspartic acid have a somewhat salty taste accompanied by a palatable aftertaste. Therefore, L-aspartic acid or its salt for use as a condiment or the like has never been thought of.
It has now been found that the addition of extremely small amounts of sodium inosinate, even below the taste threshold, to monosodium L-asparaginate increases the taste of the latter in a remarkable manner, as in the aforementioned case of monosodium L-glutamate .
In the literature there are no references to the taste threshold of monosodium L-asparaginate. According to the results of the taste test, the threshold value was found to be 0.1%. It is therefore understandable that either the taste of the asparaginate mentioned or that of the inosinate mentioned is apparently only felt
if the concentration in the aqueous solution is above 0.1 or 0.025% if the influence of other compounds is excluded.
0.1% (threshold value) aqueous solutions of monosodium L-asparaginate with an addition of about 0.0025% sodium inosinate and another solution of the same concentration of the former without the addition of the latter were tested,
all of the panelists judging the pleasant taste of the former versus the taste of the latter. In the organoleptic test method for 0.010 / 0 (below the threshold value) aqueous solutions of sodium inosinate with an addition of about 0.01% monosodium L-asparaginate and another solution of the same concentration without addition, the taste testers clearly distinguished the taste of the same.

Experiments in which the taste nature is described by the taste test of a college serve this purpose. 49 examiners received an aqueous solution with 0.2% monosodium irasparaginate and 0.01% sodium inosinate as well as a second aqueous solution only with 0,
2% monosodium L-asparaginate. 46 testers described a strongly pleasant taste or such a taste as being equivalent to monosodium glutamate for the first sample, while only 14 testers found a weakly pleasant taste for the latter. From these results it is undoubtedly clear that many people with a taste for taste perceive the taste of monosodium L-asparaginate with a small addition of sodium inosinate the same as for monosodium glutamate.
A suitable amount of sodium inosinate added to monosodium L-asparaginate is, as has been found, within the limits of 2/10 to 20/100. With regard to the organoleptic testing of monosodium L-homocysteinate, 10 excellent examiners were selected from among a few 70 who were members of our research institute and whose ability and accuracy in matters of taste were frequently checked during the duration of the examinations. Furthermore, the analysis of the test results was carried out continuously. The results of the test were therefore scientifically reliable.
The threshold value for monosodium L-homocysteinate, which has never been determined so far, was 0.015%.
The taste testers reliably differentiated solutions with a content of 0.1% monosodium L-homocysteinate and 0.00025% or more sodium inosinate from another aqueous solution with only the same amount of homocysteinate alone.

The threshold value for monosodium threo-s-hydroxy-L-glutamate, which has never been determined up to now, was 0.03%.
The taste testers clearly differentiated aqueous solutions with 0.1% monosodium threo-ss-hydroxy-L-glutamate and 0.00010 / 0 (1 / 30o of the threshold value) or more sodium inosinate from another aqueous solution with the aforementioned amount of des β-hydroxy glutamate alone.
Even with the organoleptic test of a 0.01% aqueous solution of sodium inosinate (1/5 of the threshold value) with an addition of 0,

002% sodium inosinate is equivalent to a solution of 0.2-0.3% monosodium glutamate. It was also clarified that since the effect of β-hydroxy-glutamate is equivalent to that of monosodium glutamate, the former is remarkably enhanced by such a small sub-threshold addition of sodium inosinate.
A suitable amount of sodium inosinate added to monosodium threo-ss-hydroxy-L-glutamate was found to be in the range of 1/10 to 1/100. Satisfactory effects have been recognized when products are made from both compounds, in such a ratio to food in a concentration between 0.1-0.3%.
It was also found that the addition of an extremely small amount of sodium inosinate, even below the threshold value, to the monosodium salt of L-α-aminoadipic acid of the chemical formula

significantly increases the taste of the latter.
With regard to the organoleptic examination of the α-amino adipate, 10 excellent examiners were selected from 70 examiners and the analysis was carried out in the manner mentioned above for homocysteinate. Accordingly, the results obtained are also reliable.
The threshold value for monosodium L-α-amino adipate, which was likewise never determined, was found to be 0.25% / a.

The addition of a suitable amount of sodium inosinate to monosodium L-α-amino-adipate was between 2/100 and = 0/100. Satisfactory effects were recognized when products from both compounds were added in a ratio to soup or other dishes with a concentration between 0.1 and 0.2%.
In comparison with all of the tests mentioned above, taste tests of aqueous solutions of 16 kinds of natural, non-acidic amino acids, sodium chloride, sucrose, acetic acid, succinic acid and the like with an addition of inosinic acid in an amount below the threshold value were tested , but no change in taste found in any of these experiments.
