Abstract
A sucrose ester of a fatty acid is made by subjecting an alkyl ester of a fatty acid to alcoholysis with sucrose in a reaction medium in which the reactants and the sugar ester are soluble, concentrating the reaction product, admixing with the concentrate an auxiliary solvent which is miscible with the concentrate but in which the sucrose ester is relatively insoluble, the degree of concentration of the reaction product and the quantity of auxiliary solvent used being such that a major proportion of the sucrose ester in the reaction product is precipitated. The fatty acid residue in the alkyl ester preferably contains 8 to 20 carbon atoms and the alkyl group not more than 4 carbon atoms. The reaction medium is preferably dimethyl formamide or dimethyl sulphoxide and the alcoholysis is preferably effected using substantially equimolar proportion of alkyl ester and sucrose and in the presence of an alkaline catalyst. Suitable auxiliary solvents are ketones, such as acetone, methyl ethyl ketone or cyclohexanone, esters, such as ethyl acetate and aryl acetate, aromatic hydrocarbons, particularly benzene, halogenated derivatives of aromatic and aliphatic hydrocarbons and ether.
