Abstract

Foodstuffs, e.g. meat or vegetables, are sterilized by a thermal pre-treatment above 0 DEG C., e.g. by high-frequency heating or immersion in hot water, followed by irradiation with ionizing radiation, e.g. gamma, beta, or X-rays, neutral or electrically charged particle beams, at a sufficiently low dosage rate e.g. 50,000 to 2 X 106 rads, preferably 250,000 to 106 rads, as to avoid substantial alteration in the properties of the foodstuff. The food may, if desired, be packaged before irradiating. French Specification 1,184,899 is referred to.
