Abstract
Frozen foods are reconstituted by subjecting to a series of pulses of radiant heat, whereby the food is controllably thawed out without adversely affecting the properties of the food. In examples cooked ground meat and cooked potatoes in a sauce were frozen, and then reconstituted by radiant heat from electric heaters which were switched on and off according to a predetermined programme.
