Abstract

PURPOSE: The food to be treated is irradiated uniformly on the surfaces with far- infrared rays in a specific wavelength range using an infrared tube with an appropriate capacity from a constant distance to heat to the sterilization temprature, thus permitting the sterilization of packed food at a relatively low temperature.
CONSTITUTION: Food products such as fish paste products, meat or noodles, packed with a film such as polyvinylidene chloride film are irradiated using infrared rays tubes 4 with a capacity of less than 500 watts, emitting far-infrared rays of 10W 100μ wave length and being arranged to keep an interval so as to avoid the overlapping irradiation at a distance of 50cm from the surface of the food to be treated. Further, reflecting plates are used to prevent the loss of the infrared rays and to give the rays emitting directions to raise the inner temperature of the food to 70W80°C, thus effecting the sterilization within a few minutes. Far-infrared rays can uniformly heat the food products inside as deeply as about 40mm and the heating with radiation makes it unnecessary to seal the heating unit tightly and packed food products can directly be heated. Therefore, the unit can be miniturized, the operations and controls are simplified and energy is saved.
