Abstract

The invention comprises gluconic acid monohydrate. It is prepared by agitating a gluconic acid solution (i.e. a solution in water of gluconic acid and its lactones whether or not in equilibrium) containing 30-40% by weight of the acid as C6H12O7 at a temperature of not more than 30 DEG C. for a time sufficient to allow monohydrate crystals to form. Inoculating crystals of monohydrate may be present. The monohydrate loses its water of crystallisation at 30-45 DEG C. In an example, glucose is oxidised to gluconic acid with Acetobacter suboxydans, the filtrate concentrated and crystallised at -2 to +2 DEG C. U.S.A. Specification 1,942,660 is referred to.
