Abstract
In a process for increasing the ratio of fructose to glucose in invert sugar, an aqueous 10 to 15% solution of invert sugar is subjected to aerobic fermentation, by a submerged mixture of the enzymes glucose oxidase and catalase, at a temperature between 25 DEG and 40 DEG C. and a pH between 3.5 and 5.6 maintained as by adding an alkali such as sodium hydroxide or carbonate. Air, e.g. enriched with oxygen, may be passed into the solution at the rate of 4 to 4.25 litres per litre of solution per minute. Alternatively, oxygen may be passed in at the rate of 1.33 litres per litre per minute. When the fermentation is carried out in the presence of air, 0.1% of the enzyme mixture, computed on the weight of the sugar solids in the solution, is used. When air enriched with oxygen is present, 0.05% of the enzyme mixture is used. The fermented solution may be treated with a cation-exchange resin to remove sodium ions and, if desired with an anion-exchange resin to remove gluconate ions. Fermented aqueous solutions may be produced comprising, by weight, 16 to 20% of fructose, 10.5 to 13.5% of glucose and 2.7 to 3.9% of gluconic acid.
