Abstract

Production of a crystalline lactulose product of at least 80% lactulose content entails heating a solution of lactose of pH greater than 5 at a temperature between room temperature and 150 DEG C., separating the unconverted lactose, oxidizing the residue with bromine and separating the acids formed. According to an example, a lactose solution treated with calcium hydroxide is heated at 100-102 DEG C. for 15 min., and is allowed to cool; after 2 days, crystallized lactose is filtered off, the liquid is concentrated and further lactose is filtered off; the filtrate is diluted and sodium bromide is added; the resulting solution is electrolyzed, using graphite electrodes, until aldoses are no longer detectable chromatographically; during the bromine oxidation, calcium carbonate is added to neutralize the acids formed, and, after the oxidation, the product is passed over cation and anion exchangers, the solution obtained is concentrated in vacuo and is further dehydrated by treating with, and distilling off, methanol, the lactulose being finally allowed to crystallize out.
