Abstract
A dry cold-water-soluble gelatine composition comprises amorphous gelatine and a dispersant. The amorphous gelatine may be coated with the dispersant by milling or grinding a mixture of comminuted amorphous gelatine and the dispersant, e.g. dissolved in a volatile solvent, by spraying a solution of the dispersant in a volatile solvent on to comminuted amorphous gelatine or by dissolving the dispersant in an aqueous solution of gelatine and drying the solution without permitting the gelatine to pass through a gelled state. The dispersant may be a silicone or a mixture of silicones, polyethylene glycol of high molecular weight, polyethylene glycol monolaurate or monostearate, glycerol or propylene glycol monolaurate or monostearate, sorbitan monolaurate or trioleate, polyoxyethylene stearate, polyoxyethylene sorbitan, polyoxyethylene sorbitan monolaurate, monostearate or monooleate, polyoxyethylene propylene glycol monostearate, octyl, cetyl or stearyl alcohol, stearamide, tributyl phosphate, a sodium salt of sulphated glycerol monopalmitate, monostearate or monooleate, sulphated octadecyl lactate, sulphated acylated tartaric acid, cetyltrimethyl or lauryltrimethyl ammonium bromide, a condensation product of stearylamine and ethyl metaphosphate, an amine having the general formula: <FORM:0845274/IV(b)/1> in which R is a long-chain radical and x and y are integers, oleylhydroxyethyl imidazoline, a condensation product having the general formula: R.N:CH(CHOH)4CH2OH, e.g. formed by condensing lauryl amine with glucose, a metal salt of a substituted quaternary hydroxy-cycloimidinic acid metal alcoholate, a condensation product of an amino-acid or peptide with an acid, fatty acid chloride or sulphonyl chloride, a condensation product of carbamyl chloride or an alkyl-chloroformate with an amino acid, protein or protein hydrolysate, an alkali or amine salt of cholic acid, a sulphated sterol, a water-soluble naphthene, dodecyl sulphate, cetyl sulphate, a triethanolamine soap, di-isobutylsulphosuccinate, di-octylsulphosuccinate or a condensation product of the sulphuric ester of ethanolamine with caprylic, capric or stearic acid or with coconut fatty acid chlorides.ALSO:A dry cold-water-soluble gelatine dessert composition for making jellies comprises amorphous gelatine, a dispersant, a fruit acid such as citric acid and sufficient buffer salts, e.g. sodium chloride, sodium dihydrogen phosphate and sodium monohydrogen phosphate, to bring the pH value of a solution of the composition in water to 3,3. The amorphous gelatine may be coated with the dispersant by milling or grinding a mixture of comminuted amorphous gelatine and the dispersant e.g. dissolved in a volatile solvent, by spraying a solution of the dispersant in a volatile solvent on to comminuted amorphous gelatine or by dissolving the dispersant in an aqueous solution of gelatine and drying the solution without permitting the gelatine to pass through a gelled state. The dispersant may be a silicone or a mixture of silicones, polyethylene glycol of high molecular weight, polyethylene glycol monolaurate or monostearate, glycerol or propylene glycol monolaurate or monostearate, sorbitan monolaurate or trioleate, polyoxyethylene stearate, polyoxyethylene sorbitan, polyethylene sorbitan monolaurate, monostearate or monooleate, polyoxyethylene propylene glycol monostearate, octyl, cetyl or stearyl alcohol, stearamide, tributyl phosphate, a sodium salt of sulphated glycerol monopalmitate monostearate or monooleate, sulphated octadecyl lactate, sulphated acylated tartaric acid, cetyltrimethyl or lauryltrimethyl ammonium bromide, a condensation product of stearylamine and ethyl metaphosphate, an amine having the general formula: <FORM:0845274/VI/1> in which R is a long-chain radical and x and y are integers, oleylhydroxyethyl imidazoline, a condensation product having the general formula R.N=CH(CHOH)4CH2OH, e.g. formed by condensing lauryl amine with glucose, a metal salt of a substituted quaternary hydroxy-cycloimindinic acid metal alcoholate, a condensation product of an amino-acid or peptide with an acid, fatty acid chloride or sulphonyl chloride, a condensation product of carbamyl chloride or an alkyl-chloroformate with an amino-acid, protein, or protein hydrolysate, an alkali or amine salt of chloric acid, a sulphated sterol, a water-soluble naphthene, dodecylsulphate, cetylsulphate, a triethyanolamine soap, di-isobutyl sulphosuccinate, di-octylsulpho-succinate or a condensation product of the sulphuric ester of ethanolamine with caprylic, capric or stearic acid or with coconut fatty acid chlorides.
