Abstract

The development of haze in beer is prevented, and its foaming improved, by the addition, after fermentation but before finishing by such operations as incorporating more carbon dioxide and finally filtering, of 5 to 25 parts per million by weight of sulphur dioxide in gaseous form. A montmorillonite clay may be added, preferably before the sulphur dioxide, for adsorbing long-chain proteins; suitable clays are hectorite, bentonite, nontronite, saponite, sepiolite and beidelite. A proteolytic enzyme, e.g. a bromelin and papain mixture, may be added with the sulphur dioxide.
