825,432. Preserving food by heating in cans. BEAUVAIS, M. Jan. 25, 1957 [Jan. 30, 1956], No. 2846/57. Class 49. Food, such as sardines, is cooked in cans 12 by conveyance e.g. in a matter of 20 to 40 minutes, in freely suspended hanging trays 15 with grid-like bases 11 in which the cans are held with their open face downwards through at least one cooking oven 1 and a drying oven 2 arranged in horizontal alignment and the lower entry pulleys 8 1 in the cooking oven and the return pulleys 8 1 <SP>11</SP> in the drying oven are located in the same horizontal plane. The hanging trays 15 are hooked on to the shafts coupling the articulated sections of two parallel conveyer chains 6 as they pass between the pulleys 8 2 -8 2 <SP>11</SP> and then travel through a steam oven 1 at 100‹ C. with such a speed that the food is cooked right through before leaving the oven. The trays then pass through a free space A and into the oven 2 for drying of the food by air sent by a fan 4 into a chamber 5 at a temperature of 100‹ to 150‹ C. and a speed of about 6 to 8 metres per second, and finally are unloaded between pulleys 8 5 and 8 2 <SP>1</SP>. Trays 17, 18 collect fatty waste matter and liquid during the cooking and drying of the food.
