Abstract
A substitute for palm kernel or coconut oil stearine, for cocoa butter, or for "hard" butter, which is suitable for use in cream fillings for biscuits and chocolate, in soft chocolate coatings, in chocolate coatings for ice cream, and in puff biscuits, is obtained by a process in which palm kernel oil, alone or in admixture with not more than 10 per cent by weight of another oil rich in acids having 16 or 18 carbon atoms, for example palm oil, is hydrogenated and subjected to molecular rearrangement at a temperature above the melting point of the oil, preferably in that order (see Group III).
