Abstract
Yeast concentrate obtained by concentrating fermented yeast-containing wort is dehydrated into cake form and subjected to its principal wash on a rotating or other continuous filter, the washing water being partially or entirely removed through the filter. The quality of the yeast product may be additionally improved by employing fermented wort removed from the yeast concentrate as diluent in the last fermenting vat. According to an example, a yeast suspension is concentrated in separators to about 84 per cent water content without washing and is then supplied to the continuous filter surface of a vacuum filter of diameter 2 m. rotating at 3.3 r.p.m. The yeast is dehydrated to about 73 per cent water content, washed for 5 to 10 seconds over one quarter of the periphery of filter surface with water supplied at the rate of 750 to 1000 l./hr. and finally dehydrated to about 73 per cent water content.
