Abstract
Meat sausage free from shrinkage and running is obtained by incorporating in the meat a mixture of 20-30 per cent of the potassium metaphosphate known as Kurrol's salt and 80-70 per cent of sodium and/or ammonium citrate, e.g. 5 g. of the mixture is added to 1 kg. meat prior to mincing.
