Abstract
Screened flours produced from cereals, legumes or tubers are, by means of further treatment in a spiral air separator, separated into portions which differ from each other as regards their chemical constitution, for example as regards their protein and starch content. The spiral air separator is a device in which the flour is carried in a stream of air moving in a path of decreasing radius, and in which the heavier particles are separated from the lighter ones by the differing centrifugal effects. In the case of wheat and maize flours it is stated that the gluten content and quality varies with the particle size, and that a flour having desired chemical characteristics can be obtained by choosing the size of particle to be separated.
