Abstract

Water-soluble alginate salts are made by mixing alginic acid having a moisture content of between 50 and 75 per cent with at least one moisture-free alkaline compound and optionally at least one additive compound (such as sugar or salts), grinding the mixture in a mill, and thereafter subjecting the mixture to the action of a homogenizing apparatus, the mechanical working being such as to transform the mixture to a partially liquid state, enabling diffusion and reaction to take place throughout the mixture. Suitably the alginic acid has a moisture content of about 70 per cent and the alkaline compound is an alkali metal bicarbonate, e.g. sodium bicarbonate, the mixture in the homogenizer being subjected to a high pressure which is suddenly released whereby the mixture is dried. The preparation of a water-soluble composition of sodium alginate from alginic acid and sodium bicarbonate, with the addition of sugar, is described with reference to a flow diagram.ALSO:Water-soluble alginate salts suitable for use as thickening agents in edible compositions are made by mixing alginic acid having a moisture content of between 50 and 75 per cent with at least one moisture-free alkaline compound and optionally at least one additive compound, such as buffer salts or sugar, grinding the mixture in a mill, and thereafter subjecting the mixture to the action of a homogenizing apparatus, the mechanical working being such as to transform the mixture to a partially liquid state, enabling diffusion and reaction to take place. Suitably the alginic acid has a moisture content of 70 per cent and the alkaline compound is sodium bicarbonate, the mixture in the homogenizer being subjected to a high pressure which is suddenly released, whereby the mixture is dried. The product may be obtained in a state of fine division or may be extruded in strip or film form or other elongated form. An example is concerned with the production of a readily-soluble composition of fine sugar in sodium alginate from moist alginic acid, sodium bicarbonate and sugar.
