Abstract
790,969. Apparatus for cooking food in steam. HEINZ CO., H. J. May 1, 1956 [May 10, 1955], No. 13393/56. Class 28 (1). Food is cooked in a flowable condition by delivering it to a flow of steam travelling sufficiently fast in a confined space to entrain the food and keep it in suspension at a selected pressure until it is cooked, after which it is separated from the stream. Food, e.g. beef, is chopped, ground or mashed and is fed to a hopper 1 leading to a pump 2 which discharges the food at a predetermined uniform rate into an injector. This injector has a central tube 5, with annular holes 5a, within a mixing chamber 6 comprising a casing 6a providing a chamber 7. Steam is fed through a pipe 8, under control of an adjustable valve 15, into chamber 7 and thence through holes 5a, Fig. 2, in tube 5. Opposite pipe 4 there is a venturi 9 opening into an elongated tube 10 which leads to the top of a combined separator and expansion chamber 11 having an outlet pipe 12 for the steam and an outlet 13 for the food. The size of an orifice in plate 14 provided in tube 10 governs the pressure in and velocity of flow through the tube. Pipe 12 has two branches 17 and 19 leading respectively through valve 18 to the atmosphere and through valve 20 to a condenser and vacuum producing means. The latter arrangement is used when processing food at subatmospheric pressures.
