Abstract

763,263. Preparation of dough pieces for bread. BAKER PERKINS, Ltd. Jan. 25, 1955 [Feb. 4, 1954], No. 3296/54. Class 87(2). The texture of a loaf is improved by keeping the width of a piece of dough constant whilst it is sheeted at 5 and coiled at 8. This may be effected by providing flanges on the sheeting rollers and confining side walls in the coiling zone of the coiling apparatus. The coiled dough is loaded into tins, proved, and baked with or without the intermediate steps of rolling or first proving and final moulding. It is stated that the dough pieces have their cells elongated, with their major axes disposed in one plane. Specifications 480,869, 594,584 and 600,930 are referred to.
