Abstract

Citric acid is produced by the submerged vegetative fermentation of a carbohydrate-containing medium by means of Aspergillus niger, in which copper in ionic form is incorporated into the carbohydrate-containing medium. Copper can advantageously be added as copper sulphate but may also be incorporated in the form of any salt soluble in the fermentation medium providing it does not have an undesirable anion. The copper eliminates the adverse effect of nutrient iron on cellular morphology. In the examples media containing (a) undeca tionized corn sugar, and (b) decationized corn sugar are subjected to submerged vegetative fermentation by means of Aspergillus niger in the presence of varying quantities of copper in ionic form.
