Abstract

Pectolytic enzymes are obtained by precipitation with a water-miscible alcohol (e.g. ethanol or propanol) from a solution of molasses which has been fermented to give citric acid, e.g. with Aspergillus niger. Any iron present may be removed by precipitation with potassium ferrocyanide.
