Abstract

An acid-proof amylase is prepared by the submerged fermentation of a culture of a Black Aspergillus selected from Aspergillus niger, A. awamori and A. usami in a conventional nutrient medium in which, for the first part of the fermentation, the pH is kept in the range pH 5.0 to 5.8 and, subsequently, it is held in the range pH 2.2-4.5. The pH is then allowed to rise again to pH 5.0 to 5.5 and the enzyme is recovered by conventional means from the culture.
