Abstract

Submerged fermentation process for prodn of amylolytic enzymes for converting starch to sugar which is then converted to alcohol, comprises growth of a fungal culture or a medium contg. (A) potato, maize or other cereals and (B) either water, when the initial pH is 4-4.5 or the filtrate obtd. by fermentation of the above starch sources when pH is initially 5.5, the pH being kept at 4.2-5.4 during cell multiplication by addition of NH3, whereby the enzymes produced by the fungus completely hydrolyze the starch which is subsequently converted to alcohol by conventional fermentation. Pref. is Aspergillus niger 49-AN(CZ) which produces large amts. of both alpha-amylase and amyloglucosidase so only one fungus is needed for the whole process.
