A portion of ice cream is provided with a peripheral wrapper 2, Fig. 2, the edges of which stand slightly proud of the exposed ice cream surfaces whereby when several such portions are packaged and cold stored side-by-side without intervening separators, adhesion between the adjacent exposed ice cream surfaces is prevented. The wrapper may be formed with a flap 3 to facilitate its removal. The portions are prepared by enclosing a block 1 of ice cream, Fig. 1, in a container or tubular wrapper 2 having a seam with an overlapping flap 3, the ice cream being extruded into the wrapper and then frozen hard. The block is then cut into wrapped portions by pressing it against a frame comprising a series of reciprocating fine toothed saws or serrated knives 4, the teeth of which have no set, and the portions are disposed side-by-side in an outer wrapper or container. As the ice cream is made with a substantial air content, it is compacted by the saws or knives; the wrapper is also compressed, but due to its resilience it springs back after the cutting operation and stands slightly proud of the ice cream surfaces. The thickness of the wrapper is so chosen that this result occurs, the minimum thickness in the case of a cardboard wrapper being of the order of .015 inch.
