Abstract

Potable liquids which are matured in contact with wooden material, have the maturing accelerated by an electric current passed through the liquid whilst in contact with finely divided wooden material and catalytically active carbon or other catalyst having a large absorbing surface. Specified liquids are whisky and vinegar. The liquid may be contacted first with the wood and then the catalyst or both simultaneously. The wood and/or catalyst may be suspended in the liquid or the latter may pass through separated layers wood and catalyst. The wood e.g. oak may be toasted (for flavour) or roasted (in which case it provides the catalyst also). The current may be H.F. which can be pulsed, or a D.C. reversed at intervals.
