[Class 58] In an apparatus for testing the baking properties of corn meal and flour, of the kind comprising a heated constant-temperature liquid bath 1 in which is housed a fermentation vessel 2 to receive a sample to'be tested, the fermentation vessel is also filled with the liquid bath and has a vertical measuring cylinder 6 opening into its bottom part and a gas outlet tube 7 at its upper part opening into a closed bell-jar 8 connected by means of an inlet tube 9 to an open vessel 10, other open bell-jars 12, 11 being arranged respectively in said open vessel and in the measuring cylinder and being connected by pneumatic means 14, 13 to separate gas pressure registering means. As shown, the sample 5 is placed in a bowl 3 in the fermentation vessel 2 in the bath 1 filled with water and maintained at constant temperature by means of an electric element 19 and thermostat 18. During fermentation the gases evolved escape into bell jar 8 and the increased pressure forces water through tube 9 into vessel 10 and displaces an equal volume of air from bell jar 12 through conduit 14 to a recording instrument 16. The gas retained by the sample causes it to swell and displace an equal volume of air from the bell jar 11 through the conduit 13 to the recording instrument 15. Specification 463,908 is referred to.
