[Class 123(i)] In a pressure cooker having an elliptical closure 14 with a peripheral rim 15 which is adapted to underlie a seating surface 16, formed by the underside of a flange constituting the mouth of the cooker, with the interposition of a sealing gasket 17, the said closure being supported by a bridge piece 19, straddling the cooker mouth, by a cylindrical stem 23 which projects axially upwardly from the centre of the closure and through a bearing 22 in the bridge where it is fitted with a retaining spring 27, a bolt 38 is provided for locking the closure and bridge together with the rim 15 in pressure sealing engagement with the surface 16. The bolt 38 is slidably mounted in a bearing 39 on the underside of the bridge, one end of the bolt being bent through an elongated slot 36 in the latter and fitted with an operating knob 35, and the other end being rounded to engage a transverse hole 40 in the stem 23. As shown, the hole 40 presents an upper surface slanting downward in the direction of locking movement of the bolt 38. The stem 23 terminates in a handle 25 provided internally with a shoulder 33, and an upstanding ferrule 29, integral with the bearing 22, also has an external shoulder, these two shoulders being brought into engagement, upon depression of the handle 25 against the spring 27 and with subsequent rotation of the handle through 90 degrees relatively to the ferrule 29, to lock the closure 14 in its furthest position with respect to the bridge 19 prior to insertion into and withdrawal from the mouth of the cooker.
