[Class 49] [Also in Group XI] Compressed blocks of partially dried edible portions of fruits or vegetables in raw or cooked condition are dehydrated by high frequency dielectric heating under reduced pressure. Briquettes A of size 6 in. x 3 in. x ¥ in. of carrot or beet shreds dried to 15 per cent water content are formed under a pressure of 300-700 lb. per sq. in. and the briquettes are dried to 1 per cent moisture content by placing between the electrodes 1 and 2 in the chamber 4, heating the briquettes to 110‹- 150‹F. by connection of the electrodes with the oscillator B operated at 10-29 megacycles, and maintaining sub-atmospheric pressure in the chamber by the pump 5, the removal of water vapour being assisted by allowing a small quantity of air to enter through the adjustable inlet 6. The dehydrated briquettes are enclosed in impervious wrappers, of, e.g. airtight paper or metal. The Specification as open to inspection under Sect. 91 comprises also dehydration by high frequency electrical heating within a vacuum of any food product. This subject-matter does not appear in the Specitication as accepted.
