Abstract

Potatoes are washed and cut into slices, dice, strips or other pieces, which are treated with a diluted, preferably 2 per cent, solution of hydrochloric or phosphoric acid for about 30 minutes so that the pH value in the surface layers is below 5 and then dried at a lower pressure than atmospheric, preferably below .5 kg/cm2, and at a temperature which is held below the temperature of gelatinisation of the starch at each stage of the drying. The product may be ground to flour. The potatoes may be peeled and the treated pieces may be rinsed with water before drying. The Specification as open to inspection under Sect. 91 comprises also the drying of other vegetable foodstuffs including fruit and the treatment with a solution of an acid salt or other acid-reacting medium. This subject-matter does not appear in the Specification as accepted.
