Abstract
Substances whose aqueous solutions gelatinize on cooling or storage and whose constituents responsible for gelatinizing consist of sulphuric acid esters of carbohydrates, have their gelatinizing power and gel hardness improved by a cation-exchange reaction either by treating the substances with a solution of sufficient concentration to effect the exchange or bye-passing the substances in solution through a base exchange filter. Compounds yielding potassium, ammonium, or aluminium ions are used; compounds yielding anions capable of producing with the cations of the original substance insoluble compounds removable by filtration may be employed to produce a gel giving little ash on ignition. The gelatinizing power and gel hardness may be still further increased by adding to the gel after the cation exchange reaction has been carried out, a further amount of a salt of the cation.
