Abstract

594,695. Moulding dough rolls. BUECHEK, J., and McMURTRIE, U. Feb. 8, 1944. No. 2312. [Class 87 (ii)] [Also in Groups XXX and XXXVII] In making a dough roll by rolling up a continuously advancing sheet of dough, oil is applied to the whole width of the sheet except for the longitudinal edge portion which is to be last rolled, and water is applied to the said longitudinal edge portion to form a roll-sealing surface, the oiled edge being progressively turned upwardly and then progressively turned inwardly to roll up the sheet until the watered edge is finally turned upon the resulting roll, the second turning being accompanied by continuous application of uniform pressure to the roll as it is formed and regardless of roll diameter. The baker pushes a hand-formed flat sheet of dough on to a conveyer belt 23 leading to a vertically-reciprocating beater 25 which flattens out the dough. The flattened dough piece then passes between two pairs of rollers 36, 37 and 38, 39, and drops on to an endless conveyer 70 which takes it forward to a rotating roller 127 which forms the dough sheet into a roll. As the roll is being formed another rotating roller 128, resiliently mounted to yield vertically and adjustably counterweighted at 129a, presses on the roll and controls the tightness of the latter. As the dough travels from left to right along the machine, (a) it is dusted with flour at 48, (b) it is sprayed with oil from spray heads 77 and water from spray head 78, and (c) sugar, cinnamon, nuts, raisins, cream &c. are applied to the oiled surface from one or more hoppers 92 (see Group XXX). When the roll has been formed it travels to the right, passes between two vertically disposed belts 132, 137, drops into a vertically disposed cylinder 148, and is cut into lengths by the bars 150 of a cutting wheel 149. This wheel is turned intermittently by pawl-and-ratchet mechanism 151 operated by a solenoid 155 which is intermittently energised by a make-and-break switch (see Group XXXVII) which may be adjusted to vary the length cut off the roll.
