Abstract

551,958. Food preparations; confectionery. KUNZLE, C. Oct. 31, 1941, Nos. 14035 and 14945. [Classes 28 (i) and 49] Carrot or beet is impregnated under pressure with hot syrup consisting of sugar, glucose and water, preferably in the approximate proportions by weight of 50, 25 and 25 per cent. respectively. The carrot or beet in pieces of convenient size may be boiled to effect softening and then immersed in the boiling syrup, pressure being applied by means of compressed air or the steam generated. The boiling may be repeated in a syrup of the same or greater concentration. Flavouring or colouring material may be added to the syrup. The impregnated carrot or beet pieces may be dried and coated with crystallised sugar or chocolate or made into a paste with wholemeal flour and cocoa, to which nuts or dried fruit may be added, and cut into bars, which may.be coated with chocolate. The second Provisional Specification comprises also similar treatment of other roots, such as swedes, turnips, parsnips and artichokes.
