[Class 14 (ii)] The tendency of compressed yeast to crumble is reduced by mixing with the yeast before pressing or at any other stage, a small proportion of magnesium or calcium carbonate or a mixture thereof. The lightness of colour may be enhanced by a mixture of an emulsifying agent such as ammonium soap, or a fatty acid ester of a polyhydric alcohol.
