[Class 40 (iii)] [Also in Group I] An apparatus for testing flour photo-electrically comprises a source of light 2, Fig. 1, a lightsensitive cell 6, a measuring instrument 10 connected to the cell, and interposed between the light source and the cell a device 3 adapted to contain a layer of dry flour of predetermined weight, volume and height. When the device 3 filled with flour is inserted between the lamp 2 and the cell 6, an E.M.F. is generated and is measured by the instrument 10. The reading increases while the heat from the lamp dries the flour and then remains constant at a value depending on the shade of the flour. This is a function of the ash content of the flour, and the instrument may be graduated to indicate this ash content. A convenient holder for the flour comprises short outer and inner tubes 23, 21, Fig. 4, with transverse glass discs 24, 22, between which the flour is compressed by a screw wise motion between the two tubes which are interconnected by pins 26 and oblique slots 28. The disc 24 is detachably secured by bayonet joints 32 and is removed to enable the addition or removal of flour to obtain the correct weight. A scraper 16, Fig. 5, is provided to make the surface of the flour smooth before the disc 24 is replaced.
