Abstract

A preparation for use in making puddings, custards, blanc-manges, creams, sweet soups, &c. is obtained by mixing together a melt of invert sugar with a hot melt of drop sugar, incorporating binding media, such as starch powder or skim or whole milk powder, in the mixture, and finally while it is still warm incorporating therein a mixture of cold fondant sugar and fats such as butter, cream, lard or oil. The invert sugar may be prepared by boiling ordinary sugar with sour milk residues such as buttermilk. Flavouring substances including burnt sugar and caramel and colouring matters may be added to the binding media or to the invert or fondant sugars. The fondant sugar and fats may be emulsified into a form similar to mayonnaise with addition of absorbent materials such as flour. The final product may be shaped and air-dried and may then be broken up or ground.
