Abstract

In the manufacture of concentrated sweetened milk products and substances derived therefrom such as the block, powder, paste, &c. forms thereof, fat-soluble vitamins are added in the form of an emulsion in water, fresh milk, sugar syrup or other suitable aqueous liquid to the milk to be concentrated after it has been pasteurized and before or during the early stages of the concentration, water-soluble vitamins being added as an emulsion with concentrated sweetened milk during the concentration or subsequent cooling or as a solution in water, fresh milk or other suitable aqueous liquid during the concentration. Alternatively the concentration of the milk containing the fat-soluble vitamins may be carried to a degree of excess and the water-soluble vitamins added in solution in water during the cooling. In an example, fresh or standardized milk is sucked into a vacuum pan with sugar and then a pasteurized emulsion of vitamins A and D in fresh milk is sucked into the pan with the rest of the milk. An aqueous solution of vitamin B concentrate and pure vitamin C (ascorbic acid) is pasteurized, cooled immediately and sucked into the pan during the concentration. After the concentration the product is cooled.
