Abstract
Hop extract is added to beer wort in at least two separate fractions, I poor in tannin but containing resins and perhaps oils and II rich in tannin and poor in oils and resins, the wort being boiled with one fraction and then with the other. I is obtained by extraction with organic solvents, e.g. ether, alcohol or ethylene dichloride and II by subsequent extraction with water or alcohol-water. If the water is boiling, II also contains the hop pectin. The fractions may be added in either order.
