Abstract

Fruit and like products, more particularly grapes, mushrooms, and legumes, are preserved by packing in sawdust, cork dust, saw chips, &c. saturated with a solution of copper sulphate, which has been neutralized, e.g. with chalk slurry or sodium carbonate, and dried. The fruit &c. is then stored at a low temperature, e.g. 0 DEG C. The storage may be effected in airtight vessels, if desired under reduced pressure, or in carbon dioxide or other indifferent gas, or both, and the vessels may be kept at about 0 DEG C. in cold storage rooms.
