Abstract

Meat which has been subjected to preliminary chilling is stored in a storage chamber containing an atmosphere consisting of air and ozone and no other constituents in appreciable proportions generated by an ozonizer the high tension electrodes of which are not exposed to the atmosphere. The pressure of the atmosphere in the chamber may be above equal to or below atmospheric, and the temperature in the chamber may be above 32 DEG F., e.g. 35 DEG F. The ozonoizers used may be constructed as described in Specifications 461,217 and 462,767, [both in Group XL].
