[Class 14 (ii).] In brewing and other fermentat i o n processes, particularly bottom fermentation processes, the rising head is clarified by allowing it to pass through openings f in a catching or skimming device c, arranged closely above the fermenting liquor. The device c retains the solids on the subsequent fall of the head. The openings for the rising head may be provided with raised edges and become narrower towards the top, while smaller openings for the return of the liquor are provided. The catching device may also be in the form of a number of more or less oblique or wavy strips of metal or also of sheet metal rings. Slots h for adjusting the height of the device or means for causing the device to float on the liquor may be provided.
