Abstract

347,583. Plant for making and baking bread &c. HARDER, L. S., POINTON, J. E., and BAKER PERKINS, Ltd., Westwood Works, Peterborough. Dec. 27, 1929, No. 39605. [Class 28 (i).] A dough moulding, proving, and baking plant comprises a moulding machine 6 which receives dough lumps from a series of sources and a selecting device 16 which transfers the moulded dough pieces into different paths appropriate to the subsequent treatment required. Thus, a dough divider 5 may discharge lumps alternating with lumps received from the shoot 13 of a first prover 11, the conveyer 8 transferring these alternately arranged lumps to the flap 16 which is so oscillated that the lumps received via the moulding machine 6 from the divider 5 are transferred to the first prover 11, while the lumps received via the moulding machine from the first prover are transferred to a transversely moving conveyer 14 which carries them to a second or final prover 15. The proved dough is removed from the final prover at 15a which is conveniently near the inlet of a continuous oven 18 whose discharge is preferably at the same end as the inlet. According to a modification, the plant may be arranged on two floors, the oven being on the lower floor, while the divider, moulder and final prover are on the second floor, the first prover being arranged on the ceiling of the lower floor.
