Abstract

Pure levulose is made by evaporating to dryness the solution obtained by inversion of inulin with acid, finely dividing the residue, stirring with an alcohol and separating the undissolved residue of levulose. In an example a solution obtained by inversion of inulin with acid is freed from acid and evaporated to complete dryness in vacuum at 50-60 DEG C., if desired with seeding out. The residue is finely divided and stirred with alcohol, the solid levulose is separated, dried and if desired again ground. The remaining sugar syrup can be used for fermentation to alcohol.
