Saccharine solutions, concentrating and crystallizing. - Large symmetrical sugar crystals are obtained by .blowing air or other gas through sugar liquor, thereby causing vigorous agitation of the liquor and evaporation of water. Crystallization may be aided by the addition of small sugar particles. Fresh sugar liquor is added as the crystals grow. The temperature is kept below the caramelization point.
