Abstract

Yeast.-A process for producing seed or commercial yeast with continuous addition of fresh wort, centrifuged wort, or other solutions, or water to the fermenting wort, and withdrawal of yeast-containing wort, consists in controlling the additions or withdrawals so as to establish for a shorter or longer period a predetermined constant weight of yeast per unit volume of fermenting wort. The withdrawn yeast-containing wort may contain alcohol or the weight of yeast per unit volume of fermenting wort may be such that the alcohol disappears during fermentation. The weight of yeast may be increased or decreased during fermentation from an actual to a desired figure.
