Flaying-knives of the kind having a guard applied to one face of the blade, and leaving uncovered a marginal strip along the cutting edge d of the blade have the guard c held in place by a headed pin n on the guard engaging a bayonet slot near the tip of the blade, and a tongue g on the guard which enters a recess in the handle and is held by a sliding ring i secured if desired bv a screw. The guard has a curved surface but is substantially triangular in cross-section, to provide a thick back, may be hollow as indicated at m, Fig. 2, and is preferably of aluminium. A recess for the thumb is provided near the handle, in the back of the guard, or, as shown at l, Fig. 1, on one face. The guard may be made for use by right- or lefthanded users.
