Abstract
A method of undertaking the final drying of pre-dried hops having a maximum water content of 15% uses an air stream having a temperature of 15-25 DEG C and a relative humidity of 2-7%; the air having been conditioned by freezing out moisture from the air stream by cooling the air stream to at least -21 DEG C and then reheating. Typically dries hops having a water content of 10% are pro- duced. The use of comparatively low temperature cooling air leads to lower hop degradation and lupuline damage.
