Abstract
A substantially dry starch material is heated in presence of a hydrolysing agent to a temperature of about 325 DEG F. to produce a composition having a sugar content ranging between 6 and 13 per cent, and containing also other products of amylolysis, together with some unaltered starch. In an example, powdered and substantially dry starch is treated with about 0.5 per cent by weight of pure hydrochloric acid previously diluted to about 10 DEG B<\>ae. The mixture is heated to 325 DEG F. in a steam-jacketed converter provided with agitating means, and maintained at that temperature for about an hour. Regulation of the heating so that the moisture present in the mixture is evaporated before conversion begins is stated to improve the colour of the product. The product may be mixed with wheat or other flour in various proportions and used in the manufacture of bread.
